- 1 pound farmers cheese, or use well drained ricotta or cottage cheese
- 2 eggs
- 1 teaspoon vanilla
- ½ cup all purpose flour, plus ½ cup for dredging
- ½ teaspoon baking powder
- ¼ cup sugar
- ¼ teaspoon kosher salt
- ½ cup dried cherries, or raisins (optional)
- 8 tablespoons avocado oil, or any light oil for frying
Instructions
- Soak the dried cherries or raisins in hot water to soften while preparing the dough. Skip this step if not using dried fruit.
- In a mixing bowl, combine the farmers cheese, eggs, vanilla, ½ cup of flour, baking powder, sugar, and kosher salt. Mix well to form a dough.
- If using, drain the soaked dried cherries or raisins and fold them into the dough.
- Dust a clean surface with the additional flour.
- Shape the dough into small pancakes, about 1-inch thick.
- Heat the avocado oil in a skillet over medium heat.
- Fry the pancakes on each side for about 3-4 minutes, or until golden brown.
- Remove from the skillet and place the pancakes on a paper towel to drain excess oil.
- Serve warm and enjoy with sour cream or jam, if desired.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend.
These pancakes can be served with fresh fruit or yogurt for added flavor.
