Description

This rice pudding is a delightful combination of creamy texture and sweet flavor. With just a few key ingredients like cooked rice and whole milk, it’s an easy dessert perfect for any occasion!


Ingredients

  • 3 cups white rice (cooked)
  • 3 cups whole milk
  • ⅔ cup granulated sugar
  • ¼ teaspoon fine sea salt (or to taste)
  • ½ teaspoon cinnamon
  • 1 egg
  • 2 tablespoons salted butter
  • 1 teaspoon pure vanilla extract
  • ½ cup golden raisins


Instructions

  1. Warm the milk in a thick-bottomed saucepan, but don't let it boil.
  2. In a small bowl, whisk the egg.
  3. Remove ½ cup of the warm milk from the saucepan and mix it with the egg, then set aside.
  4. Add sugar, salt, cinnamon, and rice to the remaining milk in the saucepan.
  5. Bring the mixture to a boil, then reduce the heat and cook for 10-15 minutes until thick and creamy.
  6. Stir in the egg/milk mixture and golden raisins (if using) and cook for an additional 3 minutes, stirring frequently.
  7. Remove from heat and add butter and vanilla; stir until the butter has melted.
  8. Let sit for 5 minutes to cool slightly as it thickens more.
  9. Serve warm or transfer to an airtight container to cool and serve cold.

Notes

For a creamier texture, use extra milk.
You can substitute raisins with other dried fruits or nuts for variation.
