Description

This Pesto Chicken Sandwich stands out with its vibrant flavors and simple preparation. Layered with juicy chicken, fresh mozzarella, and garden-fresh tomatoes, it’s ideal for a quick dinner or a satisfying lunch.


Ingredients

  • 1 baguette
  • 2 cups cooked chicken, grilled and sliced or rotisserie
  • 2-3 ripe tomatoes
  • 4 ounces fresh mozzarella, sliced
  • 2-3 tablespoons pesto
  • fresh basil leaves
  • salt and pepper to taste


Instructions

  1. Slice the baguette lengthwise and toast if desired.
  2. Spread pesto on one side of the bread.
  3. Layer with tomato slices and season with salt and pepper to taste.
  4. Add the cooked chicken on top.
  5. Top with mozzarella slices and fresh basil before closing the sandwich.

Notes
