- 16 ounces rotini pasta cooked al dente
- 1 cup broccoli florets chopped
- 1 cup cauliflower florets chopped
- 1 cup grape tomatoes halved
- 3/4 cup yellow pepper chopped
- 1/4 cup shredded carrots
- 2-3 green onions sliced
- 4 ounces mozzarella cheese cubed
- 1/4 cup fresh herbs (italian parsley, basil & chives)
- 3/4 cup mayo
- 3/4 cup sour cream
- 3 tablespoons lemon juice
- 1 1/2 teaspoons dijon mustard
- 1 1/2 teaspoons salt
- 3/4 teaspoon garlic powder
- 3/4 teaspoon pepper
- 1/4 cup fresh herbs
Instructions
- Cook the rotini pasta al dente according to package instructions, then drain and rinse with cold water. Set aside.
- Chop the broccoli, cauliflower, yellow pepper, and green onions into small pieces. Halve the grape tomatoes.
- In a bowl, combine all dressing ingredients and whisk until smooth and creamy.
- In a large bowl, mix the cooked pasta, chopped vegetables, fresh herbs, and dressing. Stir well to combine. If not serving immediately, reserve half of the dressing and add it just before serving.
Notes
For extra freshness, add more herbs according to your taste.
This salad is best enjoyed chilled; allow it to sit in the refrigerator for a bit before serving.
