Description

These Millionaire’s Shortbread Cookies are a delightful treat that combines rich vanilla shortbread, creamy chocolate ganache, and silky dulce de leche. Perfect for gatherings or as a special homemade gift, they are easy to prepare and utterly delectable.


Ingredients

  • 1 recipe vanilla bean shortbread cookies
  • 5 oz semi-sweet chocolate chips or chopped chocolate
  • 5 oz heavy whipping cream
  • 1 can (13.4 oz) dulce de leche caramel
  • 1 bag (8 oz) english toffee bits


Instructions

  1. Bake and cool the shortbread cookies as instructed. Alternatively, store-bought shortbread cookies can be used.
  2. To prepare the chocolate ganache, place chocolate chips in a bowl. Heat the cream in a saucepan over medium heat until it's hot and steaming, but not boiling. Pour the heated cream over the chocolate and let it sit for several minutes, then stir until smooth.
  3. Allow the ganache to cool at room temperature for 30-60 minutes until it thickens slightly. To speed up the process, place the bowl in the fridge and stir every 10 minutes until it's the right consistency.
  4. Fit a disposable 12-inch piping bag with a coupler and tip #12, then fill with the cooled ganache. Pipe a ring of ganache onto each cooled cookie.
  5. Prepare another piping bag with the dulce de leche. Pipe it into the center of the chocolate ganache ring. For easier piping, warm the dulce de leche in a microwave for 30 seconds at 50% power until it softens.
  6. To finish, dip the tops of the cookies into the toffee bits, allowing the toffee to attach to the ganache and caramel.

Notes

Use high-quality chocolate for the ganache for richer flavor.
Make sure the dulce de leche is warm enough to pipe smoothly; this makes the assembly easier.
