Description

Enjoy the delightful Marry Me Chicken Pasta, a perfect blend of flavors from tender chicken, sundried tomatoes, and a creamy sauce. This dish is quick to prepare, making it an ideal choice for a weeknight dinner or a cozy night in.


Ingredients

  • 2 tbsp sundried tomato oil from jar (divided, or olive oil)
  • 1 lb. chicken breasts (cut into 1-inch cubes)
  • 1 tsp salt (divided)
  • 1 tsp black pepper (divided, freshly cracked)
  • ½ onion (small dice)
  • 4 garlic cloves (minced)
  • ½ cup sundried tomatoes (packed in oil, thinly sliced)
  • 2 tbsp tomato paste
  • 2½ cups chicken broth
  • 8 oz. penne pasta (uncooked)
  • 1½ tsp italian seasoning
  • ½ cup heavy cream (room temperature)
  • ⅓ cup frozen spinach (thawed and pressed)
  • ½ cup parmesan cheese (grated)


Instructions

  1. Gather and prepare all ingredients.
  2. Heat 1 tablespoon of sundried tomato oil in a large skillet over medium-high heat. Season the chicken with ½ teaspoon of salt and ½ teaspoon of pepper.
  3. Add the chicken to the skillet and cook undisturbed for 3 minutes. Flip and cook for another 3 minutes, then set aside.
  4. In the same skillet, add the remaining sundried tomato oil, onions, garlic, and sliced sundried tomatoes. Cook for about 3 minutes until onions soften.
  5. Stir in the tomato paste and cook for 1 minute.
  6. Add chicken broth, penne pasta, remaining salt and pepper, Italian seasoning, and the chicken with drippings. Stir to combine.
  7. Bring to a boil, reduce to a simmer, and cover. Cook for 10 minutes.
  8. After 10 minutes, stir and cover again, cooking for another 10 minutes.
  9. Check the pasta for doneness. Add additional broth if needed. Once cooked, turn off the heat.
  10. Stir in the heavy cream and frozen spinach until well combined.
  11. Sprinkle with fresh Parmesan and serve.

Notes

Feel free to add other vegetables like bell peppers for extra flavor.
This dish pairs well with a side salad or garlic bread.
