- ¾ teaspoon baking soda
- 1 ¼ teaspoon baking powder
- 1 teaspoon cornstarch
- 1 teaspoon salt
- ½ cup unsalted butter, cool, not softened, but not cold either
- ½ cup brown sugar, plus 1 tablespoon
- ⅓ cup granulated sugar
- 1 large egg
- 2 ½ teaspoons vanilla
- 1 ½ cups semi sweet chocolate chips
Instructions
- In a medium bowl, whisk together the flour, baking soda, baking powder, cornstarch, and salt. Set aside.
- In the bowl of a standing mixer, beat the butter and sugars on medium speed for 2 minutes.
- Add the egg and vanilla, then beat until smooth.
- Turn off the mixer and scrape down the sides. Add the flour mixture and mix until smooth, starting on low speed and increasing to medium.
- Fold in the chocolate chips until evenly incorporated.
- Chill the dough in the fridge for 20 minutes to overnight for best results, or proceed immediately.
- Preheat the oven to 350°F.
- Scoop large, heaping 6-ounce portions, roll into balls, and place on a parchment-lined baking sheet. Bake for 12-14 minutes, adjusting time if you did not chill the dough. Press cookies down slightly before baking.
- Remove cookies to a cooling rack and enjoy!
