Description

These Jumbo Protein Peanut Butter Cups offer an irresistible combination of creamy peanut butter and rich chocolate. Easy to make and packed with protein, they’re perfect for a quick snack or dessert. With simple ingredients and straightforward steps, anyone can whip up these delicious treats at home.


Ingredients

  • 2 cups chocolate chips semi-sweet or dark
  • 2 tablespoons coconut oil
  • ¼ to cup puffed quinoa cereal (brown rice krispies or regular rice krispies, optional)
  • 1 cup creamy peanut butter
  • ½ cup peanut butter protein powder
  • 3 tablespoons agave (maple syrup or honey)
  • ¼ teaspoon fine salt
  • 1 teaspoon vanilla extract


Instructions

  1. Melt 2 cups of chocolate chips and 2 tablespoons of coconut oil in a microwave-safe bowl or double boiler until smooth.
  2. Add 1 to 1½ tablespoons of melted chocolate to each jumbo silicone muffin cup, tilting or brushing the chocolate up the sides to coat. Freeze for 10 minutes.
  3. In a bowl, mix 1 cup of peanut butter, ½ cup of peanut butter protein powder, 3 tablespoons of agave, ¼ teaspoon of salt, and 1 teaspoon of vanilla extract until a thick, doughy filling forms.
  4. Divide the filling into 6 equal portions. Press each portion firmly into the chocolate-lined cups, flattening the tops to reach the rim.
  5. Stir ¼ to ⅓ cup of puffed quinoa cereal, brown rice krispies, or regular Rice Krispies into the remaining melted chocolate. Spoon this crunchy chocolate mixture over each cup, fully covering the filling and sealing the edges.
  6. Freeze for 15 to 20 minutes, or refrigerate until firm.
  7. Pop the cups out of the silicone molds and store in the fridge for the best texture.

Notes

For a crunchier texture, use puffed quinoa cereal or rice krispies as a topping.
Feel free to adjust the sweetness by adding more or less agave syrup.
Store the cups in an airtight container in the fridge for optimal freshness.
