Description

This Greek Chicken Bowl features tender, marinated chicken served over cauliflower rice or lettuce, complemented by fresh veggies and creamy tzatziki sauce. It’s a quick, healthy meal bursting with Mediterranean flavors, ideal for busy weeknights.


Ingredients

  • 3 large chicken breasts, boneless and skinless
  • 1 batch tzatziki sauce
  • 2 cups cherry tomatoes, halved
  • 1 english cucumber, sliced
  • ½ cup red onion, sliced thin
  • ½ cup feta cheese, crumbled
  • ½ cup kalamata olives
  • 1 clove garlic, grated
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon dijon mustard
  • ½ teaspoon dried oregano
  • ½ teaspoon dried dill
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper


Instructions

  1. Prepare the Tzatziki sauce and chill it in the fridge to let the flavors meld while preparing the chicken.
  2. In a mixing cup, combine olive oil, red wine vinegar, dried oregano, dried dill, dijon mustard, grated garlic, salt, and pepper. Whisk to mix well.
  3. Transfer the marinade into a food storage bag along with the chicken breasts. Seal the bag and marinate in the fridge for 1 hour.
  4. Heat a large skillet over medium heat and add the marinated chicken. Cook for several minutes on each side until reaching an internal temperature of at least 165°F.
  5. While the chicken cooks, chop the cherry tomatoes, cucumber, red onion, and prepare other veggies.
  6. Once cooked, remove the chicken from the skillet and let it rest for a few minutes before slicing it.
  7. In serving bowls, layer cauliflower rice or lettuce as the base, then add sliced chicken, cherry tomatoes, and pepperoncini sections.
  8. Top with cucumber, kalamata olives, red onion, and crumbled feta cheese. Finish with a dollop of tzatziki in the center before serving.

Notes

Marinating the chicken for at least 1 hour enhances flavor.
Feel free to substitute cauliflower rice with lettuce for a lighter option.
Adjust the vegetables to your taste preference.
