- 2 tbsp honey
- 1/4 cup toasted coconut flakes, finely chopped
- 1/2 cup fresh squeezed lemon juice (4-5 large lemons)
- 1/2 cup sugar
- 1 cup coconut cream
- 1/2 cup cold water
- 2 cups ice
Instructions
- Brush the rim of your glasses with honey generously.
- Spread the coconut flakes onto a shallow plate and dip the glasses into the flakes, shaking off the excess.
- Press the flakes gently onto the rim to help them stick.
- In a blender, combine lemon juice, sugar, coconut cream, cold water, and ice.
- Blend until the mixture is smooth and creamy.
- Pour into four smaller glasses or two large glasses and garnish with a lemon wedge.
Notes
Feel free to adjust the sweetness by adding more honey or sugar to taste.
For a tropical twist, add a splash of pineapple juice!
