Ingredients
Scale
- 1½-2 pounds chicken breasts, cut into 1-inch-thick strips, or chicken tenders
- 1 teaspoon kosher salt
- 1¾ cups all-purpose flour
- 2 teaspoons kosher salt
- ½ teaspoon coarse ground black pepper
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- 2 large eggs
- ¼ cup whole milk
- canola oil, vegetable oil, or peanut oil
Instructions
- Add oil to a cast-iron skillet until it is about 2 inches deep and heat over medium-high until the oil reaches 365-375°F.
- Prepare a wire rack over a rimmed baking sheet and set aside.
- Sprinkle the chicken strips with 1 teaspoon kosher salt, ensuring an even coating.
- In a shallow bowl, combine flour, 2 teaspoons kosher salt, black pepper, onion powder, and garlic powder.
- In another shallow bowl, whisk eggs and milk together.
- Dredge 4-5 chicken strips in the flour mixture, shaking off excess. Dip in the egg mixture, then dredge again in flour.
