Description

Ingredients

  • -2 pounds chicken breasts, cut into 1-inch-thick strips, or chicken tenders
  • 1 teaspoon kosher salt
  • 1¾ cups all-purpose flour
  • 2 teaspoons kosher salt
  • ½ teaspoon coarse ground black pepper
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • 2 large eggs
  • ¼ cup whole milk
  • canola oil, vegetable oil, or peanut oil


Instructions

  1. Add oil to a cast-iron skillet until it is about 2 inches deep and heat over medium-high until the oil reaches 365-375°F.
  2. Prepare a wire rack over a rimmed baking sheet and set aside.
  3. Sprinkle the chicken strips with 1 teaspoon kosher salt, ensuring an even coating.
  4. In a shallow bowl, combine flour, 2 teaspoons kosher salt, black pepper, onion powder, and garlic powder.
  5. In another shallow bowl, whisk eggs and milk together.
  6. Dredge 4-5 chicken strips in the flour mixture, shaking off excess. Dip in the egg mixture, then dredge again in flour.
  7. Gently place the coated chicken strips into the hot oil. Fry 4-5 pieces at a time for 5-6 minutes per side, until golden brown and the internal temperature reaches 165°F. If browning too quickly, lower the heat.
  8. Transfer cooked chicken strips to the prepared wire rack and repeat with remaining strips.
  9. Serve warm with your favorite dipping sauces and fries, if desired.

Notes

Make sure the oil temperature is right for a crispy coating.
For extra flavor, try adding some spices to the flour mixture.
