Description

This French Clafoutis made with cherries and raspberries is a delightful treat.   • 1 cup Whole milk
  • ¼ cup Heavy cream
  • 2 tablespoon Unsalted Butter, Melted
  • ½ cup Granulated sugar
  • ½ cup All-purpose flour
  • 3 Large Eggs
  • 1 teaspoon Vanilla extract
  • ¼ teaspoon Almond extract
  • ⅛ teaspoon Salt
  • 2 cups Pitted cherries or Berries, Fresh, washed, patted dry
  • 1 tablespoon Powdered sugar, For dusting on top


Instructions

  1. Blend the milk, heavy cream, melted butter, sugar, flour, eggs, vanilla, almond extract, and salt until smooth. Alternatively, whisk all ingredients together in a large bowl.
  2. Grease a 9-inch round pan generously with unsalted butter.
  3. Spread the pitted cherries and raspberries evenly in the prepared pan.
  4. Pour the batter over the fruits.
  5. Use a wooden skewer to distribute the fruits evenly in the batter.
  6. Bake at 350°F for 40-50 minutes until puffed, golden brown, and edges pull slightly away from the pan. The center should spring back when touched.
  7. Remove from the oven and serve warm, dusted with powdered sugar.
  8. For neat slices, allow it to cool to room temperature before cutting with a sharp knife.
