Description

These Chicken Caesar Smashed Tacos combine seasoned ground chicken and fresh greens, topped with a creamy tahini dressing. Enjoy an easy, flavorful meal perfect for busy evenings!


Ingredients

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 tbsp tahini
  • 1 tbsp dijon mustard
  • 1 garlic clove, peeled
  • 2 tsp nutritional yeast
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 34 tbsp water (enough to make it smooth and creamy)
  • 1 lb ground chicken
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp black pepper
  • 810 mini tortillas (about 4-inch)
  • 2 cups romaine or green leaf lettuce, chopped
  • 1 cup kale, chopped
  • 1/2 cup parmesan, grated, plus more for topping


Instructions

  1. In a blender, combine olive oil, lemon juice, tahini, dijon mustard, garlic, nutritional yeast, salt, and pepper. Blend until smooth, adding water as needed for a creamy texture, then set aside.
  2. In a mixing bowl, combine ground chicken with salt, garlic powder, paprika, and black pepper. Mix thoroughly with a fork or your hands.
  3. Spread the seasoned chicken mixture evenly over the tortillas. Heat a small amount of oil in a skillet over medium-high heat. Cook the tortillas chicken-side down in batches for 3–4 minutes until the chicken is cooked through and golden. Flip and cook for another 30-60 seconds on the tortilla side, then remove to a plate.
  4. In another bowl, combine the chopped lettuce, kale, and parmesan. Toss with enough dressing to coat, saving any extra for later.
  5. Fill each taco with the salad mixture, top with extra dressing and parmesan if desired, and serve immediately.

Notes

Ensure the chicken is fully cooked before serving.
The dressing can be made ahead of time and stored in the refrigerator for a few days.
