Ingredients
Scale
- 1lb / 500g ground/minced beef (20% fat)
- Salt & Black Pepper, as needed
- Vegetable Oil, as needed
- 2 sheets of puff pastry
- 8 slices of American/processed cheese
- 4 tbsp caramelized onion chutney
- 4 tbsp burger sauce or sauce of choice
- 16 pickles/gherkins, patted dry
- 1 egg, beaten for egg wash
- 2 tsp sesame seeds
Instructions
- Preheat the oven to 400F/200C.
- Divide the beef into 4 portions, rolling each into a ball and then pressing them into 3.5-inch patties, about 3/4 inch thick. Season with salt and black pepper.
- Heat a large cast-iron pan over high heat. Add oil, and when hot, sear the patties for 1 minute and 30 seconds on each side to develop a crust. Set aside to cool to room temperature.
- Cut 4 circles from the pastry, each 4.5 inches wide, and 4 larger circles that are 5.5 inches wide.
- On each smaller pastry circle, place a slice of cheese and spread with 1 tbsp of chutney. Add a patty on top, followed by another slice of cheese, sauce, and pickles.
- Cover with the larger circles. Crimp the edges with a fork and trim excess pastry.
- Arrange on a baking tray lined with parchment. Brush with egg wash, sprinkle with sesame seeds, and make small steam holes on top.
- Bake for 25 minutes or until golden and flaky. Allow to cool slightly before serving.
Notes
Using beef with 20% fat ensures juicy patties.
Let the patties cool completely to avoid steaming the pastry.
Feel free to customize the sauces and toppings to your taste.
