Description

These Cheeseburger Wellingtons combine savory ground beef, melty cheese, and flaky puff pastry for a hearty meal that’s easy to prepare. Perfect for weeknight dinners or gatherings, they bring comfort and flavor in every bite.


Ingredients

  • 1lb / 500g ground/minced beef (20% fat)
  • Salt & Black Pepper, as needed
  • Vegetable Oil, as needed
  • 2 sheets of puff pastry
  • 8 slices of American/processed cheese
  • 4 tbsp caramelized onion chutney
  • 4 tbsp burger sauce or sauce of choice
  • 16 pickles/gherkins, patted dry
  • 1 egg, beaten for egg wash
  • 2 tsp sesame seeds


Instructions

  1. Preheat the oven to 400F/200C.
  2. Divide the beef into 4 portions, rolling each into a ball and then pressing them into 3.5-inch patties, about 3/4 inch thick. Season with salt and black pepper.
  3. Heat a large cast-iron pan over high heat. Add oil, and when hot, sear the patties for 1 minute and 30 seconds on each side to develop a crust. Set aside to cool to room temperature.
  4. Cut 4 circles from the pastry, each 4.5 inches wide, and 4 larger circles that are 5.5 inches wide.
  5. On each smaller pastry circle, place a slice of cheese and spread with 1 tbsp of chutney. Add a patty on top, followed by another slice of cheese, sauce, and pickles.
  6. Cover with the larger circles. Crimp the edges with a fork and trim excess pastry.
  7. Arrange on a baking tray lined with parchment. Brush with egg wash, sprinkle with sesame seeds, and make small steam holes on top.
  8. Bake for 25 minutes or until golden and flaky. Allow to cool slightly before serving.

Notes

Using beef with 20% fat ensures juicy patties.
Let the patties cool completely to avoid steaming the pastry.
