Description

These Banana Cottage Cheese Muffins are a delightful treat featuring the natural sweetness of ripe bananas and the creamy texture of cottage cheese. Perfect for breakfast or as a snack, they’re not only delicious but also easy to make, making them a great choice for those busy mornings.


Ingredients

  • 1 3/4 cups all-purpose flour (220g)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 medium overripe bananas, mashed (about 1 cup)
  • 1 cup cottage cheese, blended smooth
  • 2 eggs
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 375°F and prepare a muffin pan with liners.
  2. Blend the cottage cheese until smooth and set it aside.
  3. In a large mixing bowl, combine the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  4. In another bowl, mash the bananas. Then, add the blended cottage cheese, eggs, maple syrup, melted coconut oil, and vanilla extract. Mix until combined.
  5. Pour the wet mixture into the dry ingredients and stir gently until just mixed, being careful not to overmix.
  6. Spoon the batter into the muffin liners, filling each about three-quarters full.
  7. Bake for 18 to 24 minutes or until a toothpick inserted in the center comes out clean and the tops turn golden.
  8. Allow to cool in the muffin pan for 5 minutes, then transfer to a wire rack.

Notes

Use very ripe bananas for the best natural sweetness.
These muffins can be stored in an airtight container for up to three days.
Feel free to add nuts or chocolate chips for extra flavor!
