Description
These Vegan Banana Bread Cookies are a delightful treat packed with flavor. Made with ripe bananas and wholesome flours, they are an easy, comforting dessert perfect for any occasion.
Ingredients
Scale
- ½ cup mashed banana (one medium banana)
- ½ cup coconut sugar
- ¼ cup melted vegan butter
- 1 teaspoon vanilla extract
- 1 cup oat flour (use certified gf if needed)
- ½ cup almond flour
- ½ teaspoon baking soda
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- ¼ teaspoon salt
- ½ cup vegan chocolate chips
- ¼ cup chopped walnuts
Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a large bowl, whisk together the mashed banana, coconut sugar, melted vegan butter, and vanilla extract until combined.
- Add the almond flour, oat flour, baking soda, and salt. Mix until a dough forms, then fold in the chocolate chips and chopped walnuts.
- Use a medium cookie scoop (about 1-2 tablespoons) to scoop the dough into balls and place them a few inches apart on the prepared baking sheet.
- Bake for 15 minutes or until golden. After baking, use a round cookie cutter or cup to refine the edges for a perfect circle.
- Allow the cookies to cool on the baking sheet for 10 minutes before transferring them to a wire rack to finish cooling. Optionally, sprinkle with crushed walnuts and flaky sea salt before serving.
Notes
Letting the cookies cool is important as it helps them set properly.
Feel free to add more nuts for extra crunch!
