- 1 cup plain greek yogurt
- 1 tablespoon extra virgin olive oil
- 1 tablespoon freshly squeezed lemon juice
- ½ teaspoon garlic powder
- 1 ½ tablespoons flat leaf parsley, chopped
- 1 ½ tablespoons fresh dill, chopped
- 1 tablespoon fresh mint, chopped
- ½ teaspoon kosher salt, plus more to taste
- ¼ teaspoon black pepper
- 3 cups rotisserie chicken, finely chopped
- 1 cup english cucumber, diced
- 3 tablespoons pitted kalamata olives, finely chopped
- 3 tablespoons red onion, finely chopped
- ¼ cup + 2 tablespoons crumbled feta cheese
Instructions
- Grate the cucumber and squeeze out excess moisture using paper towels.
- In a large bowl, mix yogurt with olive oil, then stir in lemon juice, grated cucumber, garlic, parsley, dill, mint, salt, and pepper.
- Finely chop onion, rinse under hot water for 45 seconds, then under cold water to reduce sharpness.
- Slice cucumber lengthwise, scoop out seeds, and dice into ¼ to ½-inch pieces.
- Combine chicken, diced cucumber, olives, red onion, and feta with the dressing, gently mixing to coat.
- Garnish with extra feta and herbs before serving, with options for crackers, veggies, or bread.
Notes
Using rotisserie chicken saves time and adds flavor.
For creamier dressing, allow yogurt to sit at room temperature for a bit before mixing in the cucumber.
Adjust seasoning according to personal taste preferences.
