Description

Twice Baked Potato Casserole is a comforting dish that combines the creamy goodness of mashed potatoes with crispy bacon and sharp cheddar. Perfect for any family meal, it’s a hearty dish that brings warm flavors to your table, making it a true favorite for gatherings or weeknight dinners.


Ingredients

  • 5 lbs russet potatoes
  • 1 stick salted butter
  • 1 cup whole milk
  • 0.5 cup sour cream
  • 2 tbsp finely chopped chives
  • 2 tsp kosher salt
  • 1 tsp onion powder
  • 4 oz shredded sharp cheddar cheese
  • 5 strips of bacon


Instructions

  1. Preheat the oven to 400F and line a baking sheet with parchment paper or foil. Wash the potatoes and pierce each one 4-5 times with a fork.
  2. Place the potatoes on the baking sheet and bake at 400F for 50 minutes.
  3. Allow the potatoes to cool until they are easy to handle, but still warm. Cut the potatoes open and scoop the baked potato into a large mixing bowl. Pour in the melted butter, milk, sour cream, salt, and onion powder.
  4. Mix using an electric hand mixer until thoroughly combined. Gently fold in chopped chives with a flat spatula.
  5. Grease a 9×13 casserole dish and transfer the potato mixture into it. Top with shredded cheese, crispy chopped bacon, and additional chives.
  6. Bake at 350F for 20-25 minutes and serve immediately.

Notes

Feel free to add other toppings like green onions or different cheeses.
For extra flavor, consider adding garlic powder or a pinch of paprika to the mix.
