- 5 lbs russet potatoes
- 1 stick salted butter
- 1 cup whole milk
- 0.5 cup sour cream
- 2 tbsp finely chopped chives
- 2 tsp kosher salt
- 1 tsp onion powder
- 4 oz shredded sharp cheddar cheese
- 5 strips of bacon
Instructions
- Preheat the oven to 400F and line a baking sheet with parchment paper or foil. Wash the potatoes and pierce each one 4-5 times with a fork.
- Place the potatoes on the baking sheet and bake at 400F for 50 minutes.
- Allow the potatoes to cool until they are easy to handle, but still warm. Cut the potatoes open and scoop the baked potato into a large mixing bowl. Pour in the melted butter, milk, sour cream, salt, and onion powder.
- Mix using an electric hand mixer until thoroughly combined. Gently fold in chopped chives with a flat spatula.
- Grease a 9×13 casserole dish and transfer the potato mixture into it. Top with shredded cheese, crispy chopped bacon, and additional chives.
- Bake at 350F for 20-25 minutes and serve immediately.
Notes
Feel free to add other toppings like green onions or different cheeses.
For extra flavor, consider adding garlic powder or a pinch of paprika to the mix.
