- 1 tablespoon olive oil
- 1 1/4 pounds boneless skinless chicken breasts cut into bite sized pieces
- 3/4 teaspoon kosher salt or to taste
- black pepper to taste
- 3 tablespoons low sodium soy sauce tamari for gluten-free
- 3 tablespoons water
- 3 tablespoons maple syrup use 4 tablespoons for a sweeter sauce
- 2 tablespoons rice vinegar
- 1/2 – 1 teaspoon sriracha optional
- 1/2 teaspoon ground ginger
- 1/2 teaspoon garlic powder
- 2 teaspoons cornstarch + 1 tablespoon cold water whisked together
Instructions
- In a measuring glass, whisk together all ingredients for the teriyaki sauce and set aside.
- Heat olive oil in a skillet over medium-high heat. Season chicken with salt and pepper, then add to the skillet, spreading it into a single layer. Cook for 3 minutes without moving.
- Flip the chicken and continue to cook for an additional 3-4 minutes, or until it is fully cooked.
- Reduce heat to medium. Re-whisk the teriyaki sauce and pour it into the skillet with the chicken. Stir until the sauce thickens and coats the chicken, about 1-2 minutes.
- Remove from heat and garnish with sesame seeds and green onions. Serve the chicken over rice or noodles.
Notes
For a sweeter sauce, you can add an extra tablespoon of maple syrup.
Feel free to adjust the amount of sriracha according to your spice preference.
This dish pairs wonderfully with steamed vegetables or a fresh salad.
