- 1 teaspoon extra virgin olive oil, + more for greasing pan
- 1½ pounds lean ground beef
- 1 cup tomato sauce
- ¼ cup water
- 3 tablespoons taco seasoning
- 2 cups frozen corn kernels
- 1 (15-ounce) can black beans, rinsed and drained
- 2 cups crushed tortilla chips
- 2 cups shredded cheddar cheese, or mexican blend
- black olives, tomatoes, sour cream, avocado, cilantro, shredded lettuce, etc, for serving
Instructions
- Preheat the oven to 350°F. Lightly grease a casserole dish with cooking spray or oil.
- In a large skillet over medium-high heat, warm the olive oil and add the ground beef. Cook until browned, breaking up the meat as it cooks. Drain excess grease.
- Lower the heat to medium and add taco seasoning, water, tomato sauce, corn, and black beans. Stir well and cook for about 5 minutes until warmed through. Remove from heat.
- Spread crushed tortilla chips evenly in the bottom of the prepared casserole dish. Layer the beef and bean mixture over the chips, then top with shredded cheese.
- Bake uncovered for 18-20 minutes until the cheese is melted and casserole is heated through.
- Garnish and serve with preferred taco toppings.

For a spicier flavor, add jalapeños or pepper jack cheese.
