Description

This Taco Casserole combines lean ground beef, flavorful taco seasoning, and melted cheese, creating an easy and satisfying dinner dish. Perfect for family gatherings or a quick weeknight meal, it offers layers of taste topped with your favorite toppings, making it a comforting choice for any occasion.


Ingredients

  • 1 teaspoon extra virgin olive oil, + more for greasing pan
  • pounds lean ground beef
  • 1 cup tomato sauce
  • ¼ cup water
  • 3 tablespoons taco seasoning
  • 2 cups frozen corn kernels
  • 1 (15-ounce) can black beans, rinsed and drained
  • 2 cups crushed tortilla chips
  • 2 cups shredded cheddar cheese, or mexican blend
  • black olives, tomatoes, sour cream, avocado, cilantro, shredded lettuce, etc, for serving


Instructions

  1. Preheat the oven to 350°F. Lightly grease a casserole dish with cooking spray or oil.
  2. In a large skillet over medium-high heat, warm the olive oil and add the ground beef. Cook until browned, breaking up the meat as it cooks. Drain excess grease.
  3. Lower the heat to medium and add taco seasoning, water, tomato sauce, corn, and black beans. Stir well and cook for about 5 minutes until warmed through. Remove from heat.
  4. Spread crushed tortilla chips evenly in the bottom of the prepared casserole dish. Layer the beef and bean mixture over the chips, then top with shredded cheese.
  5. Bake uncovered for 18-20 minutes until the cheese is melted and casserole is heated through.
  6. Garnish and serve with preferred taco toppings.

Notes

Feel free to customize toppings based on personal preference.
This dish is perfect for meal prep and can be easily reheated.
For a spicier flavor, add jalapeños or pepper jack cheese.
