- ½ cup unsalted butter, cold and cut into cubes
- ¾ cup milk
- 2 cups strawberries, fresh, sliced
- ½ cup sugar, for strawberries
- 1 cup heavy cream
- 2 tablespoons powdered sugar
- ½ teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F and prepare a baking sheet lined with parchment paper.
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- Using a pastry blender or your fingers, cut in the cold butter until the mixture looks like coarse crumbs.
- Pour in the milk and stir until just combined, being careful not to overmix.
- Drop spoonfuls of the dough onto the prepared baking sheet.
- Bake for 12-15 minutes or until they are golden brown.
- While the shortcakes bake, combine sliced strawberries with sugar in a bowl and let sit for 15 minutes.
- In another bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
- Slice the warm shortcakes in half and spoon strawberries and whipped cream onto the bottom half. Place the top half over it and serve immediately.
Notes
For the best flavor, use ripe, fresh strawberries.
