Description

These Strawberry Oat Bars are a delightful blend of fresh strawberries and crunchy oats, baked to perfection. Perfect for a quick snack or a sweet treat!


Ingredients

  • 2 cups chopped fresh strawberries (about half-inch pieces)
  • 2 tbsp sugar
  • 2 1/2 tsp cornstarch
  • zest of one lemon
  • 1 cup all purpose flour
  • 1 1/2 cups old fashioned rolled oats
  • 1/4 cup sugar
  • 1/2 cup brown sugar, packed
  • 1/2 tsp baking soda
  • 1/2 tsp kosher salt
  • 8 tbsp unsalted butter (cut into cubes)
  • 1/2 cup sliced almonds


Instructions

  1. Preheat the oven to 350F and coat a 9×9-inch pan with nonstick cooking spray or line with parchment paper.
  2. In a small mixing bowl, stir together the diced strawberries, sugar, cornstarch, and lemon zest until the strawberries are well-coated. Set aside.
  3. In a medium mixing bowl, whisk together flour, oats, sugar, brown sugar, baking soda, and salt. Cut in the butter using a fork or fingers until crumbly, with pea-sized pieces. Save 1 1/4 cups of this mixture and set aside.
  4. Press the remaining mixture into the baking pan to form an even base layer.
  5. Pour the strawberry mixture, including juices, over the oat base layer and spread it evenly.
  6. Stir the sliced almonds into the reserved crumble mixture and sprinkle it over the strawberries.
  7. Bake for 35-40 minutes until the topping is golden brown and the strawberries are bubbling.
  8. Remove from the oven and allow to cool completely in the pan before cutting into squares. Chill in the fridge for quicker cooling.

Notes

For a healthier option, consider reducing the sugar in the strawberry filling.
These bars can be stored in an airtight container and kept in the refrigerator for up to a week.
Feel free to mix in other berries or nuts for additional flavor.
