These St. Patrick’s Day Sugar Cookies are known for their irresistible flavor and simple preparation. Made with butter, sugar, and vanilla, they are the perfect treat for any festive occasion!

- 3 cups all-purpose flour (plus more for rolling)
- 2 tsp aluminum-free baking powder
- 1 cup 2 sticks salted butter, at room temperature
- 1 cup sugar
- 1 large egg
- 2 tsp pure vanilla extract
Instructions
- In a medium bowl, whisk together the flour and baking powder, then set aside.
- In a large bowl, beat the butter and sugar together with an electric mixer on medium speed until smooth, about 1½ minutes. Add the egg and vanilla, mixing until well combined and scrape the bowl's sides with a spatula.
- Reduce mixer speed to low and gradually incorporate the flour mixture until a soft, non-sticky dough forms around the mixing attachment.
- Shape the dough into a ball, wrap in plastic wrap, and flatten into a 1-inch thick disk. Refrigerate for at least 10 minutes or store for up to 7 days when tightly wrapped.
- Preheat your oven to 375°F.
- On a floured surface, roll out the dough to about ¼-inch thickness. Use cookie cutters to cut out desired shapes and transfer with a spatula onto a nonstick baking sheet, spacing them ¾ inch apart.
- Bake one sheet at a time in the center of the oven until the cookies are puffy, about 7-8 minutes. Allow them to cool on the baking sheet for 2 minutes before moving to a wire rack to cool completely.
- Repeat with any remaining dough and scraps.
Notes
Using aluminum-free baking powder will result in a better flavor profile.
Dough can be made in advance and stored in the refrigerator or freezer for later use.
Feel free to decorate cookies with icing or sprinkles after they have cooled.
