Description

Ingredients

  • 1 cup warm water (240 ml; 110°f to 115°f)
  • 1 tablespoon granulated sugar (12 grams)
  • 1 package active dry yeast (2 ¼ teaspoons; 7 grams)
  • 3 cups bread flour spooned & leveled (375 grams)
  • 2 tablespoons unsalted butter melted and slightly cooled (28 grams; ¼ stick)
  • 1 teaspoon salt
  • 9 cups water
  • ½ cup baking soda (125 grams)
  • 1 large egg
  • 1 tablespoon water
  • Coarse salt or pretzel salt
  • melted butter


Instructions

  1. In a large mixing bowl, whisk the warm water and sugar together. Stir in the yeast and let it sit for 5 minutes until foamy.
  2. Add 2 cups (250 grams) of bread flour, melted butter, and salt to the yeast mixture and stir until well combined. Mix in another cup (125 grams) of bread flour until just combined. Adjust with more flour if the dough is sticky.
  3. Knead the dough on a lightly floured surface for 3 minutes or use a stand mixer with a dough hook to knead on low speed for 2-3 minutes.
  4. Form the dough into a ball and place it in a lightly oiled bowl. Cover and let it rest in a warm area for 30 minutes.
  5. Preheat the oven to 425°F (218°C). Line two large baking sheets with parchment paper or silicone mats.
  6. In a large pot, combine 9 cups of water and baking soda over medium-high heat until mixed thoroughly.
  7. Divide the dough into 6 equal pieces and roll each piece into a 15-inch rope.
  8. Cut each rope into 1 ½-inch pieces, yielding about 10 bites per rope.
  9. Once the baking soda bath is boiling, lower a few pretzel bites into the water for 10-15 seconds. Carefully lift them out to let excess water drip off.
  10. Place the pretzel bites on the prepared baking sheets, leaving space between each piece. Repeat for all pieces.
  11. Prepare the egg wash by whisking together the egg and water. Brush the egg wash over each pretzel bite and sprinkle with coarse sea salt if desired.
  12. Bake for 10-12 minutes or until golden brown. If smaller, reduce baking time slightly.
  13. Remove from the oven and brush with melted butter, if desired. Allow to cool slightly before serving.

Notes

For a sweeter twist, try sprinkling the bites with cinnamon sugar instead of salt after baking.
Make sure to monitor the baking time if you cut the bites smaller to ensure they do not overcook.
These pretzel bites are best served warm but can also be stored in an airtight container for a few days.
