Description

This Slow Cooker Shredded Pork Tenderloin is all about bold flavors and easy preparation. Juicy pork tenderloins are slowly cooked with pineapple juice and a blend of spices, making it an ideal comfort food option for busy nights or gatherings. Ingredients

  • 2 pork tenderloins 2 – 2.5lbs total
  • 12 oz pineapple juice 1.5 cups
  • 2 tsp kosher salt
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1/4 tsp smoked paprika


Instructions

  1. Place 2 pork tenderloins in a slow cooker and pour 1.5 cups of pineapple juice over top.
  2. Mix together 2 tsp salt, 2 tsp chili powder, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp cumin, 1/2 tsp black pepper, and 1/4 tsp smoked paprika.
  3. Pour the seasoning mixture over the pork.
  4. Set the slow cooker on low and cook for 4-6 hours.
  5. When ready, remove the pork and cut it into pieces to avoid large shreds.
  6. Shred the smaller pieces with 2 forks and return the shredded pork to the crockpot, mixing with the leftover juices.
  7. Store any leftovers in an airtight container in the fridge for up to 4 days.

Notes

Ensure to use the leftover juices when mixing the shredded pork to prevent drying out.
You can serve this dish in tacos, sandwiches, or as a main course with sides.
Adjust spices according to taste for a milder or spicier flavor.
