  • 1 medium yellow onion, diced
  • 2 garlic cloves, minced (optional)
  • 2 pounds block processed cheese, cubed
  • 20 ounces canned tomatoes with green chiles (like Rotel), two 10-ounce cans
  • 1 teaspoon chili powder (optional)


Instructions

  1. In a large skillet over medium heat, cook the ground beef until it's broken up and browned, about 4 minutes.
  2. Add the diced onion and minced garlic (if using) to the skillet, cooking for an additional 5 minutes until the onion becomes soft. Drain excess grease from the skillet.
  3. Lower the heat and stir in the cubed cheese, canned tomatoes, and chili powder until the cheese fully melts, stirring consistently.

Notes
