Description

This Reuben Sandwich is a delightful combination of savory corned beef, tangy sauerkraut, and melted Swiss cheese, all pressed between buttery rye bread. It’s an easy-to-make comfort food that’s perfect for lunch or dinner, promising a mouthwatering experience with each bite!


Ingredients

  • 8 slices rye or marbled bread
  • 1 lb thinly sliced corned beef
  • 8 slices swiss cheese
  • 1 cup sauerkraut drained and squeezed dry
  • 1/2 cup russian dressing
  • 4 tbsp butter, softened
  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 2 tbsp sweet pickle relish
  • 1 tbsp dried minced onion
  • 1 tsp worcestershire sauce


Instructions

  1. In a small bowl, whisk together all dressing ingredients and chill while prepping sandwiches for best flavor.
  2. Spread butter on one side of each slice of rye bread and place butter-side down on a clean surface.
  3. On the unbuttered side, layer a slice of Swiss cheese, folded corned beef, sauerkraut, a drizzle of Russian dressing, another slice of Swiss cheese, and top with remaining bread slices, buttered-side facing out.
  4. Heat a large skillet or griddle over medium heat and cook sandwiches for 3–4 minutes per side, pressing gently until the bread is golden brown and the cheese is melted.
  5. Let sandwiches rest for 1–2 minutes, slice in half, and serve hot.

Notes

For added flavor, use freshly grated Swiss cheese instead of pre-sliced.
Make sure to drain and squeeze the sauerkraut well to avoid soggy sandwiches.
Adjust the amount of Russian dressing based on your taste preference.
