- 8 slices rye or marbled bread
- 1 lb thinly sliced corned beef
- 8 slices swiss cheese
- 1 cup sauerkraut drained and squeezed dry
- 1/2 cup russian dressing
- 4 tbsp butter, softened
- 1/2 cup mayonnaise
- 1/4 cup ketchup
- 2 tbsp sweet pickle relish
- 1 tbsp dried minced onion
- 1 tsp worcestershire sauce
Instructions
- In a small bowl, whisk together all dressing ingredients and chill while prepping sandwiches for best flavor.
- Spread butter on one side of each slice of rye bread and place butter-side down on a clean surface.
- On the unbuttered side, layer a slice of Swiss cheese, folded corned beef, sauerkraut, a drizzle of Russian dressing, another slice of Swiss cheese, and top with remaining bread slices, buttered-side facing out.
- Heat a large skillet or griddle over medium heat and cook sandwiches for 3–4 minutes per side, pressing gently until the bread is golden brown and the cheese is melted.
- Let sandwiches rest for 1–2 minutes, slice in half, and serve hot.
Notes
For added flavor, use freshly grated Swiss cheese instead of pre-sliced.
Make sure to drain and squeeze the sauerkraut well to avoid soggy sandwiches.
Adjust the amount of Russian dressing based on your taste preference.
