- 1 ½ cups oatmeal (classic or quick oats)
- 1 and ¼ cups flour
- ½ cup brown sugar
- 1 ½ sticks of butter (¾ cup or 6 ounces), melted
- 1 ½ cups of fresh or frozen raspberries
- ½ cup of raspberry preserves
- 1 tablespoon flour
- 1 tablespoon lemon peel
- 1 teaspoon fresh lemon juice
Instructions
- Preheat your oven to 350º F and line an 8 x 8 or 9 x 9-inch baking pan with nonstick foil.
- In a large bowl, mix the oats, flour, brown sugar, and melted butter until crumbly. Set aside 1 cup of this mixture for the streusel topping.
- Press the remaining oat mixture into the bottom of the ungreased baking dish. Bake for about 15 minutes, or until it turns golden brown. Allow it to cool slightly.
- In another bowl, combine the raspberry preserves, raspberries, lemon peel, lemon juice, and a tablespoon of flour. Gently mix to combine.
- Spread this raspberry mixture over the cooled crust. Evenly sprinkle the reserved oat mixture on top, pressing down gently.
- Bake again for 22-25 minutes, or until the top is light golden brown. Let cool before cutting into bars.
Notes
For best results, use fresh raspberries if in season; frozen works well too.
You can substitute the lemon peel with lime peel for a different flavor profile.
These bars can be stored in an airtight container for up to a week.
