Description

These Raspberry Streusel Bars are a perfect treat, featuring a buttery oat crust and a fruity raspberry filling. Quick to prepare and irresistibly tasty, they are ideal for dessert lovers looking for easy, homemade recipes.


Ingredients

  • 1 ½ cups oatmeal (classic or quick oats)
  • 1 and ¼ cups flour
  • ½ cup brown sugar
  • 1 ½ sticks of butter (¾ cup or 6 ounces), melted
  • 1 ½ cups of fresh or frozen raspberries
  • ½ cup of raspberry preserves
  • 1 tablespoon flour
  • 1 tablespoon lemon peel
  • 1 teaspoon fresh lemon juice


Instructions

  1. Preheat your oven to 350º F and line an 8 x 8 or 9 x 9-inch baking pan with nonstick foil.
  2. In a large bowl, mix the oats, flour, brown sugar, and melted butter until crumbly. Set aside 1 cup of this mixture for the streusel topping.
  3. Press the remaining oat mixture into the bottom of the ungreased baking dish. Bake for about 15 minutes, or until it turns golden brown. Allow it to cool slightly.
  4. In another bowl, combine the raspberry preserves, raspberries, lemon peel, lemon juice, and a tablespoon of flour. Gently mix to combine.
  5. Spread this raspberry mixture over the cooled crust. Evenly sprinkle the reserved oat mixture on top, pressing down gently.
  6. Bake again for 22-25 minutes, or until the top is light golden brown. Let cool before cutting into bars.

Notes

For best results, use fresh raspberries if in season; frozen works well too.
You can substitute the lemon peel with lime peel for a different flavor profile.
These bars can be stored in an airtight container for up to a week.
