- 1 teaspoon baking powder
- 3/4 cup sugar
- 1/2 teaspoon salt
- 1/2 cup butter room-temperature
- 2 large eggs
- 2 teaspoons vanilla
- 1/2 cup milk
- 1/4 cup pineapple juice
Instructions
- Preheat your oven to 350°F and prepare a 9" x 2" round cake pan or 8" square cake pan.
- In a small bowl, mix melted butter, brown sugar, cinnamon, and ginger. Pour this mixture into the bottom of the prepared cake pan.
- Blot the pineapple slices to eliminate excess moisture and arrange them on top of the mixture. Place a cherry in the center of each pineapple ring, then refrigerate to set the topping mixture.
- In a mixing bowl, cream the butter for about a minute, then mix in the eggs, vanilla, and milk until smoothly combined. Gradually add the cake flour, baking powder, sugar, and salt into the wet mixture, followed by the pineapple juice. Mix until just combined; avoid overmixing to retain a soft cake texture.
- Spread the batter evenly over the chilled topping in the pan.
- Bake for 40-50 minutes, covering with foil if needed to prevent over-browning. Check doneness by inserting a toothpick into the center; it should come out clean.
- Remove from oven and cool on a wire rack for 20 minutes. Invert the cake onto a platter to let the topping juices cascade.
- Allow the cake to cool fully before slicing, though it can be served warm with a messier presentation.
