Description

Savor the taste of homemade Mexican Pizza! This delightful dish features layers of crispy tortilla, zesty enchilada sauce, and fresh toppings, making it a perfect option for a quick dinner or a fun weekend treat.


Ingredients

  • 4 small tortilla wraps
  • 1 cup enchilada sauce
  • 1 cup refried beans
  • ½ cup shredded mozzarella cheese
  • 1 tomato diced
  • ½ red onion diced
  • 2 scallions finely sliced
  • ½ cup sweetcorn
  • ¼ cup cilantro diced
  • ½ cup guacamole to serve
  • 2 tablespoon hot sauce


Instructions

  1. Preheat your oven to 355°F (180°C) and line a baking tray with baking paper.
  2. Cook the refried beans if making from scratch, or warm the store-bought beans.
  3. Prepare the vegetables by dicing tomatoes and slicing scallions.
  4. Place the tortilla wraps on the baking tray and spray with cooking oil; bake for 4-6 minutes until golden and crispy.
  5. Top two tortilla wraps with a layer of refried beans and a thin layer of enchilada sauce.
  6. Overlay the remaining tortillas, followed by another layer of enchilada sauce, shredded cheese, diced tomatoes, red onion, and sweetcorn.
  7. Bake the Mexican pizzas for 8-10 minutes until the tortillas are crispy and the cheese is melted.
  8. Finish by topping with scallions, cilantro, guacamole, and hot sauce. Cut into quarters and serve immediately while hot!

Notes

For extra flavor, add your favorite veggies or spices to the refried beans.
Make it spicy by adding more hot sauce or jalapeños.
Substitute with gluten-free tortillas to accommodate dietary needs.
