- 1 tsp baking powder
- 3/4 tsp kosher salt
- 1/4 cup sugar
- 1/4 cup unsalted butter cold, cubed
- 1 cup buttermilk
- 3/4 cup dried cranberries, currants or raisins
Instructions
- Preheat the oven to 375° F.
- In a large bowl, whisk together the dry ingredients. Sprinkle the cold butter cubes over the flour mixture and cut in the butter until very small pieces remain.
- Slowly add the buttermilk, gently stirring to incorporate. Knead in the buttermilk using your hands until combined, ensuring the dough is not too sticky.
- Turn the dough out onto a surface and gently knead in the dried fruit to avoid toughening the dough.
- Shape the dough into a round loaf, making a crisscross cut on top about ½ inch deep.
- Place the loaf in a cast iron skillet or on a parchment-lined baking sheet, then bake for 45-50 minutes or until a wooden skewer inserted comes out clean.
