Description

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 3/4 tsp kosher salt
  • 1/4 cup sugar
  • 1/4 cup unsalted butter cold, cubed
  • 1 cup buttermilk
  • 3/4 cup dried cranberries, currants or raisins


Instructions

  1. Preheat the oven to 375° F.
  2. In a large bowl, whisk together the dry ingredients. Sprinkle the cold butter cubes over the flour mixture and cut in the butter until very small pieces remain.
  3. Slowly add the buttermilk, gently stirring to incorporate. Knead in the buttermilk using your hands until combined, ensuring the dough is not too sticky.
  4. Turn the dough out onto a surface and gently knead in the dried fruit to avoid toughening the dough.
  5. Shape the dough into a round loaf, making a crisscross cut on top about ½ inch deep.
  6. Place the loaf in a cast iron skillet or on a parchment-lined baking sheet, then bake for 45-50 minutes or until a wooden skewer inserted comes out clean.

Notes

For a variation, try adding nuts or seeds for added texture.
Ensure the butter is cold for the best texture in the bread.
