Description

Enjoy a flavorful Instant Pot Corned Beef that’s perfect for a quick dinner or comforting meal. Featuring tender brisket, garlic, and veggies, this dish is sure to satisfy your cravings for homemade goodness.


Ingredients

  • 1 corned beef brisket 3-5 lbs
  • 1 onion peeled and cut into wedges
  • 4 whole garlic cloves lightly smashed
  • 4 carrots peeled and cut into large chunks
  • 1 pound small yellow potatoes whole or halved
  • 1/2 head green cabbage cut into 6 wedges
  • 3 tablespoons butter
  • 1 teaspoon garlic minced
  • 1 tablespoon chopped parsley
  • salt and pepper to taste
  • grainy mustard for serving optional


Instructions

  1. Remove the corned beef from the package and rinse with cold water, then pat dry with paper towels.
  2. Place the onions and garlic cloves at the bottom of the Instant Pot. Set the corned beef on top of the onions.
  3. If provided, add the seasoning packet on top of the meat, or skip this step if absent.
  4. Pour 4 cups of water into the pot.
  5. Seal the lid and set the Instant Pot to manual high pressure for 90 minutes.
  6. Carefully release the pressure using the quick release method as described in the Instant Pot manual.
  7. Remove the corned beef, onions, and garlic from the pot, discarding the onions and garlic. Keep the meat warm on a plate.
  8. Add the carrots, potatoes, and cabbage into the remaining liquid in the pot. Seal and cook on manual high pressure for 5 minutes, then carefully quick release the pressure.
  9. In a small bowl, combine the butter, minced garlic, parsley, and salt and pepper. Microwave in 30-second intervals until melted.
  10. Remove the vegetables and potatoes from the pot and arrange them around the corned beef. Drizzle the melted garlic butter over the potatoes and vegetables.
  11. Slice the corn beef against the grain and serve with mustard if desired.

Notes

Choose a brisket size that fits well in your Instant Pot for best results.
Serve with grainy mustard for added flavor, if you like.
This recipe can easily be adjusted for larger or smaller servings by changing the meat size.
