- 1 pound lean ground beef
- 1 cup diced yellow onion

- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 2 heaping tablespoons tomato paste
- 2 cups low sodium beef broth
- 2 cups whole milk
- 8 ounces uncooked macaroni noodles or small shells
- 2 cups shredded colby jack cheese or cheddar cheese
Instructions
- Heat the olive oil in a large pot over medium-high heat. Once hot, add the diced onion and ground beef, crumbling the beef while seasoning with salt and pepper. Cook until the beef is browned and the onion is soft, about 6-8 minutes, then drain excess grease using paper towels.
- Mix in the chili powder, smoked paprika, garlic powder, and tomato paste, and cook for another minute to combine.
- Add the uncooked macaroni, beef broth, and milk. Stir well and bring to a boil, then reduce the heat to medium-low, allowing it to simmer for 8-12 minutes until the pasta is al dente and the liquid is mostly absorbed, stirring frequently.
- Remove from heat and stir in the shredded cheese until melted. Taste and adjust seasoning if needed, then serve hot, garnished with parsley if desired.
