Description

Ingredients

  • 2 pounds ground beef (80/20)
  • ⅓ cup milk
  • 2 eggs, lightly beaten
  • 1 medium yellow onion, grated or minced finely
  • ¼ cup fresh parsley, finely chopped
  • 3 tablespoons fresh mint, finely chopped
  • 2 garlic cloves, minced
  • 2 teaspoons salt
  • 2 teaspoons dried oregano
  • 1 teaspoon black pepper
  • 1 cup gluten free breadcrumbs


Instructions

  1. Preheat the oven to 425°F and prepare a large sheet pan with a thin layer of olive oil.
  2. In a large mixing bowl, combine the ground beef, milk, eggs, onion, parsley, mint, garlic, salt, oregano, and black pepper.
  3. Mix the ingredients by hand until partially blended, then add the gluten-free breadcrumbs, ensuring they're evenly incorporated without overmixing.
  4. Use a large cookie scoop to portion the mixture, rolling them into balls and placing them on the greased baking sheet.
  5. Bake for about 15 minutes, or until the internal temperature reaches 165°F on a meat thermometer.
  6. Remove from the oven and let the meatballs cool slightly before serving.

Notes

Avoid overmixing to ensure tender meatballs.
These meatballs can also be frozen before cooking for a quick meal later.
