Description

These funfetti cake cinnamon rolls are packed with flavor, featuring bright sprinkles and a creamy frosting. Perfect for breakfast or dessert, they’re simple to make and sure to impress!


Ingredients

  • 1 cup warm milk
  • 1/4 cup dark brown sugar
  • 2 1/4 tsp active dry yeast
  • 4 tbsp butter, melted and cooled slightly
  • 1 large egg, lightly whisked, at room temperature
  • 1/4 cup funfetti jimmies or discs
  • 3-3 1/2 cups all purpose flour
  • 6 tbsp butter, softened
  • 2/3 cup dark brown sugar
  • 2 tsp cinnamon
  • 3 tbsp funfetti sprinkles or discs
  • 4 tbsp butter, softened
  • 4 oz cream cheese, cold
  • 2 tsp vanilla extract
  • 1 tsp cake batter extract
  • 2 cups powdered sugar


Instructions

  1. In the stand mixer, combine warm milk, dark brown sugar, and yeast. Let sit until foamy for about 5-10 minutes. Whisk in melted butter, beaten egg, and funfetti sprinkles.
  2. With the mixer on low, add 3 cups of flour. Gradually add more flour by the tablespoon until a soft, tacky dough forms.
  3. Grease a bowl with oil, flip the dough inside, cover with plastic wrap, and let it rise in a warm spot until doubled in size, about 60-90 minutes.
  4. Lightly grease a 9×13 inch dish and flour a flat surface. Punch down the dough, roll it into a 12×18 inch rectangle, and spread the softened butter, keeping a 1/2 inch border. Mix brown sugar and cinnamon, spreading this mixture over the butter and topping it with funfetti.
  5. Roll the dough tightly from the long side into a log and slice into 12 rolls. Cover and let rest until puffy, or refrigerate and let rise overnight.
  6. Preheat oven to 375°F. Uncover rolls and bake for 18-20 minutes until golden. If refrigerated, they may need 22-25 minutes. Let cool for 10-15 minutes.
  7. For the frosting, beat softened butter and cream cheese together, then mix in vanilla and cake batter extracts. Gradually add powdered sugar and whip until fluffy. Spread on warm rolls and top with more funfetti.

Notes

Allow rolls to cool slightly before frosting for a perfect spread.
You can refrigerate the dough overnight to enhance the flavors.
Experiment with different extracts or add nuts for a twist.
