Description

Easter Crack is a delightful treat made with saltines, caramel, and white chocolate. It’s easy to prepare, making it an irresistible dessert for gatherings or a sweet snack any day!


Ingredients

  • 4048 saltine crackers (enough to cover a sheet pan in a single layer)
  • 1 cup (2 sticks) unsalted butter
  • 1 cup packed light brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 cups white chocolate chips (good quality, like ghirardelli or guittard)
  • 1/4 cup freeze-dried strawberries
  • 2 tablespoons chopped pistachios (lightly salted)
  • ~1/3 cup easter egg chocolate candies, roughly chopped


Instructions

  1. Preheat the oven to 400°F (205°C). Line a rimmed sheet pan with parchment paper or foil and arrange saltines in a single layer.
  2. In a medium saucepan over medium heat, combine the butter and brown sugar, stirring until melted.
  3. Once melted, stir well and bring the mixture to a boil.
  4. Let it boil for 3 minutes without stirring, until it thickens and turns slightly darker. Remove from heat and mix in the vanilla and salt cautiously as it will bubble up.
  5. Pour the caramel over the crackers and spread it evenly with an offset spatula.
  6. Bake in the oven for 5 minutes until bubbly.
  7. Remove from the oven and sprinkle white chocolate chips over the caramel.
  8. Let sit for 2–3 minutes to melt, then smooth the chocolate layer. If needed, return to the oven for 30 seconds to help melt completely.
  9. While the chocolate is melted, add toppings like freeze-dried strawberries, pistachios, and chocolate eggs.
  10. Cool at room temperature for 15–20 minutes, then refrigerate for 20–30 minutes until set.
  11. Break into bite-sized pieces and enjoy!

Notes

Ensure the caramel mixture is boiling to achieve the right texture.
Use high-quality white chocolate for the best flavor.
