This Doritos Chicken Casserole is a delicious blend of crunchy Doritos, tender rotisserie chicken, and creamy cheese, perfect for a quick and satisfying dinner.

- 3 cups nacho cheese doritos lightly crushed
- 2 cups rotisserie chicken cut into small pieces
- 1 can black beans 15oz drained and rinsed
- 1 can corn 15oz drained
- 1 can fire roasted rotel 10oz
- 1 can cream of chicken soup 10.5oz
- 1 cup sour cream
- 1 tablespoon taco seasoning
- 2 1/2 cups cheddar cheese freshly grated
- 1/4 cup cherry tomatoes quartered
- 2 tablespoons cilantro chopped
Instructions
- Preheat the oven to 350°F and spray a 9×13 baking dish with non-stick spray.
- Crush the Doritos and spread half of them as an even layer in the baking dish.
- In a large bowl, combine rotisserie chicken, black beans, corn, Rotel, cream of chicken soup, sour cream, taco seasoning, and 1 cup of grated cheese. Mix until well combined.
- Spread the chicken mixture on top of the Doritos in the baking dish, then top with the remaining crushed Doritos and cheddar cheese.
- Bake for 20-25 minutes until the cheese is lightly golden brown. Garnish with cherry tomatoes and cilantro before serving.
Notes
Feel free to customize with your favorite toppings like avocado or jalapeños.
For extra crunch, add additional crushed Doritos on top just before serving.
This dish can be made ahead of time and stored in the refrigerator for easy reheating.
