Description

This Crunchy Cabbage Salad with Chicken is bursting with flavor! Tender chicken, crisp cabbage, and colorful veggies come together for a quick, healthy meal perfect for busy weeknights.


Ingredients

  • 2 cups chicken breast, cooked and chopped
  • 1/2 head cabbage, chopped green or a red/green mix
  • 1/2 cup shredded carrots
  • 1 cup sugar snap or snow peas, sliced diagonally (optional)
  • 3 green onions, chopped
  • 2 tbsp sliced almonds
  • 2 tbsp sesame seeds
  • 1 pkg chicken-flavor ramen noodles (raw), crumbled
  • fresh cilantro (optional)
  • seasoning packet from ramen noodles
  • 1 tbsp sugar
  • 1/2 cup avocado or olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp rice vinegar or other light colored vinegar


Instructions

  1. In a large bowl, combine the cooked chicken, chopped cabbage, shredded carrots, optional peas, chopped green onions, sliced almonds, sesame seeds, and crumbled raw ramen noodles. Toss gently to mix everything evenly.
  2. In a jar or small bowl, mix together the ramen seasoning packet, sugar, oil, salt, pepper, and vinegar. Shake or whisk until well combined to create the dressing.
  3. Just before serving, pour the dressing over the salad and toss gently to coat. Use just enough dressing to lightly cover the salad without making it soggy. If desired, garnish with fresh cilantro. Serve immediately for the best crunch.

Notes

For added crunch, serve immediately after dressing the salad.
Feel free to replace the chicken with tofu for a vegetarian option.
Experiment with different vegetables for variety, like bell peppers or cucumbers.
