Description

These cosmic brownie cookies are a delightful treat, blending rich fudge flavor with chocolate chips and colorful candy. Perfect for all occasions, they bring happiness to gatherings and quick snacks alike!


Ingredients

  • 1 box fudge brownie mix, (18 oz.)
  • 2 tablespoons all-purpose flour
  • ¼ cup canola oil
  • 2 large eggs
  • 1 cup semi-sweet chocolate chips
  • ¼ cup heavy cream
  • ¼ cup candy-coated chocolate chips


Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, combine the brownie mix and flour, whisking well.
  3. Add the canola oil and eggs, mixing until the dough is fully combined and free of dry streaks. It will be thick.
  4. Using a large cookie scoop, drop dough onto the prepared sheets, spacing them about 1½ inches apart.
  5. Gently flatten each dough ball to remove the dome shape.
  6. Bake the cookies for 10-13 minutes until the edges are firm.
  7. Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  8. To prepare the ganache, place chocolate chips and heavy cream in a microwave-safe bowl and heat for 60 seconds.
  9. Let the mixture sit for 2 minutes, then whisk until smooth and creamy.
  10. Spread the ganache over the cooled cookies and sprinkle candy-coated chocolate chips on top immediately.
  11. Allow the ganache to set before serving.

Notes

For firmer cookies, reduce the baking time slightly.
Feel free to use any type of chocolate chips you like for added flavor.
