- 1 medium white onion, chopped
- 1 pound ground beef
- 1 teaspoon cumin
- 1 teaspoons chili powder
- 1 teaspoon salt
- 1 (16 ounce) can refried beans
- 1 (15 ounce) can chili beans
- 1 (10 ounce) can diced tomatoes with green chilies
- 1/2 cup tomato sauce
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup whole milk
- 1 large egg
- 1 can creamed corn
- 1 and 1/2 cups shredded cheddar jack cheese
Instructions
- Preheat the oven to 350°F and lightly grease a 13×9-inch baking dish.
- In a large saucepan, brown the ground beef with the chopped onion until the meat is fully cooked and onions are tender. Drain fat and return to the pan.
- Stir in cumin, chili powder, and salt until well mixed. Add refried beans, chili beans, diced tomatoes, and tomato sauce; bring to a light simmer. Adjust salt to taste if needed.
- Remove from heat and pour the chili mixture evenly into the prepared baking dish.
- In a large bowl, whisk flour, cornmeal, baking powder and salt. Create a well in the center, pour in milk, egg, and creamed corn, and mix until combined. Fold in the shredded cheese.
- Carefully pour the cornbread batter over the chili mixture, keeping it within an inch from the edge of the dish.
- Place the baking dish on a rimmed baking sheet to catch any drips during baking. Bake for 40-45 minutes or until a toothpick inserted in the cornbread comes out clean.
