Description

Ingredients

  • 1 pound chicken cooked, approximately 2.5 cups
  • ½ cup mayonnaise
  • ¼ cup pickle relish sweet or dill
  • 1 tablespoon yellow mustard
  • 1 stalk celery sliced thin
  • 1 green onion sliced thin


Instructions

  1. Boil the chicken breasts in a pot of water over medium-high heat for about 15-20 minutes, or until fully cooked with no pink remaining inside.
  2. Once cooked, shred the chicken using a food processor, kitchen shears, or two forks to your preferred consistency and place it in a large bowl.
  3. In the bowl, combine shredded chicken with mayonnaise, pickle relish, salt, pepper, sliced celery, and sliced green onion. Stir until well mixed.
  4. Serve the chicken salad over a bed of lettuce or in a sandwich, wrap, or croissant.

Notes
