Description

This Cajun Chicken Pasta features tender chicken, creamy sauce, and zesty Cajun seasoning, making it a delightful and easy meal for any night.


Ingredients

Scale
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp cajun seasoning
  • 8 oz penne or similar pasta
  • 2 tbsp butter
  • 1 tbsp flour
  • 2 cloves garlic minced
  • 2 oz cream cheese the brick style, not the tub style
  • 2 cups half and half
  • 1/4 cup fresh grated parmesan cheese not the powder type!
  • Salt
  • pepper
  • additional Cajun seasoning to taste


Instructions

  1. Combine chicken, 1 tablespoon olive oil, and Cajun seasoning in a gallon zipper bag. Shake to coat.
  2. Heat remaining olive oil in a large pan over medium-high heat. Add chicken, cover, and cook for 7 minutes per side until cooked through.
  3. Start cooking pasta according to package directions.
  4. In a medium saucepan, melt butter over medium heat. Whisk in flour until combined. Add cream cheese and garlic, whisk until smooth.
  5. Add 1/4 of half and half, mixing well. Stir in Parmesan cheese, then gradually add remaining half and half. Bring to a gentle boil, whisking continuously until thickened. Season with salt, pepper, and more Cajun seasoning if desired.
  6. Pour sauce over drained pasta and stir to combine.
  7. Serve immediately, either by slicing chicken into pasta or placing it on top. Garnish with tomatoes or green onions if desired.

Notes

For spicier flavor, increase the amount of Cajun seasoning.
Serve with a side salad to balance the meal.
