Instructions

  1. Tear the bread into 2-inch pieces and toss them into a food processor or blender. Add optional seasonings like garlic powder, oregano, and red pepper flakes if desired. Process until the bread breaks into small crumbs, processing longer if necessary.
  2. Prepare a large plate near the stove for later use. In a large stainless steel or cast iron skillet over medium heat, melt the butter until the foam nearly disappears, swirling the pan to distribute it evenly. Test the heat by dropping in a few bread crumbs; they should sizzle.
  3. Add the bread crumbs to the skillet, increase the heat to medium-high, and cook for about 3 to 5 minutes. Stir constantly, breaking up any clumps until they turn crisp and golden.
  4. Transfer the cooked crumbs to the prepared plate in an even layer to cool. They will crisp further as they cool. Season with salt to taste before using. Store any leftovers in a storage bag at room temperature for up to 3 months, ensuring quality before use.
