Description

This Black Bean Salsa bursts with flavor and freshness! Made with black beans, corn, and vibrant vegetables, it’s a perfect quick appetizer or healthy snack for gatherings.


Ingredients

Scale
  • 15 ounces black beans
  • 14 ounces whole kernel corn
  • 3 roma tomatoes insides scooped, and diced
  • ½ cup red onion diced
  • 1 teaspoon garlic minced
  • 2 tablespoons cilantro
  • ¼ cup olive oil
  • 2-3 tablespoons fresh lime juice
  • salt and pepper to taste
  • tortilla chips for serving


Instructions

  1. In a large mixing bowl, toss together the black beans, corn, diced roma tomatoes, red onion, and garlic.
  2. Add in olive oil and lime juice, and toss to combine.
  3. Sprinkle with cilantro, and add salt and pepper, to taste.
  4. Allow the salsa to chill in the refrigerator for 30 minutes, to let all of the flavors meld, and enjoy.

Notes

Chilling the salsa enhances the flavor; prepare it ahead of time for best results!
Feel free to adjust the lime juice for more or less acidity to suit your taste.
Pair this salsa with fresh tortilla chips for the perfect snack.
