Description

Biscoff Rolo Bars are an enticing blend of buttery goodness and rich chocolate caramel. With simple ingredients and easy steps, these bars are perfect for any gathering or a delightful treat after dinner. Enjoy the irresistible flavor that melts in your mouth!


Ingredients

  • 1 cup butter, at room temperature
  • ¾ cup dark brown sugar
  • ¾ cup white sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup biscoff spread or cookie butter
  • 1 ¾ cup flour
  • ¾ teaspoon baking powder
  • ½ teaspoon salt
  • 12 ounce package rolo candy, candies cut in half


Instructions

  1. Preheat the oven to 350°F and line a 9×13 pan with nonstick foil.
  2. In a mixer with the paddle attachment, cream the butter, dark brown sugar, and white sugar together.
  3. Add the eggs and mix until combined.
  4. Stir in the vanilla and Biscoff spread.
  5. Gradually add in the flour, baking powder, and salt until fully incorporated.
  6. Fold in half of the halved Rolos.
  7. Spread the batter evenly in the prepared pan.
  8. Chop the remaining Rolos and press them into the top of the batter.
  9. Bake for about 35 minutes or until the bars are lightly golden. Allow to cool completely before cutting into squares.

Notes

For extra flavor, consider adding chocolate chips to the batter.
Make sure to let the bars cool completely to hold their shape when cutting.
These bars can be stored in an airtight container for up to a week.
