- 3/4 cup dark brown sugar
- 1/3 cup sugar
- 2 large eggs, at room temperature
- 2 tsp vanilla extract
- 2 1/2 cups old fashioned oats
- 2 cups all purpose flour
- 1 tsp cinnamon
- 1 tsp baking soda
- 1/2 tsp kosher salt
- 2 cups raisins
Instructions
- Preheat the oven to 350 degrees.
- Line a large baking sheet with parchment paper.
- In a bowl, cream together the softened butter, dark brown sugar, and granulated sugar until the mixture is light and fluffy, which takes about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- Mix in the old fashioned oats, all-purpose flour, cinnamon, baking soda, and salt until just combined. Gently fold in the raisins, being careful not to overmix the dough.
- Scoop rounded 1/4 cup-sized portions of the dough and roll them into balls.
- Place the dough balls on the prepared baking sheet, ensuring there is about two inches of space between each cookie.
- Bake in the preheated oven for 13-15 minutes, rotating the baking sheet halfway through the baking time.
- Once baked, remove the cookies from the oven and let them cool on the baking sheet.
Notes
For added flavor, sprinkle flaky sea salt on top of the cookies before serving.
Cookies can be stored in an airtight container for up to a week.
Ensure butter is softened at room temperature for best mixing results.
