  • 1 loaf banana bread
  • 2 large eggs
  • 1 tablespoon light brown sugar
  • ¼ teaspoon ground cinnamon
  • ¾ cups whole milk
  • ½ teaspoon pure vanilla extract
  • 4 tablespoons salted butter (for cooking)


Instructions

  1. Preheat the griddle to 350°F (177°C) or a non-stick skillet over medium heat.
  2. Slice the banana bread into ¾-inch thick pieces.
  3. In a medium bowl, whisk together the eggs, brown sugar, and cinnamon.
  4. Add the milk and vanilla extract, and whisk until well combined.
  5. Pour the mixture into a shallow bowl or baking dish suitable for dipping.
  6. Melt ½ tablespoon of butter on the preheated cooking surface.
  7. Dip a slice of banana bread into the custard for about 3-5 seconds, then flip and repeat on the other side.
  8. Place the soaked banana bread on the hot, buttered surface.
  9. Cook for 4-6 minutes on the first side until golden brown, then flip and cook for another 4 minutes on the other side.
  10. Continue this process until all banana bread slices are cooked.
  11. Serve hot with maple syrup or butter.

Notes

For best results, use stale banana bread as it soaks up the custard better.
Add toppings like sliced bananas or walnuts for extra flavor.
This dish can be easily doubled for more servings.
