- 200g spaghetti
- 100g pancetta or guanciale, diced
- 2 large eggs
- 50g grated parmesan cheese
- 2 cloves garlic, minced
- salt and black pepper to taste
- fresh parsley for garnish (optional)
Instructions
- Cook the spaghetti in boiling salted water until it's al dente, then drain the pasta.
- In a pan, cook the diced pancetta until it's crispy, then add the minced garlic and cook for an additional minute.
- In a bowl, beat the eggs and mix them with the grated parmesan cheese.
- Combine the hot spaghetti with the pancetta and garlic in the pan. Remove from the heat.
- Quickly add the egg and cheese mixture to the pasta, stirring vigorously to create a creamy sauce.
- Season to taste with salt and black pepper, and garnish with fresh parsley if you like.
Notes
For a richer flavor, use guanciale instead of pancetta.
