Ingredients
Scale
- 8 boneless, skinless chicken thighs
- ½ cup greek yogurt
- ⅔ cup shredded cheddar cheese
- 2 cloves garlic, minced
- 2 tablespoons ranch seasoning
- ⅓ cup panko breadcrumbs
- ¼ cup parsley, chopped (for garnish)
Instructions
- Preheat your oven to 400°F.
- Pat the chicken thighs dry with a paper towel. Spray a baking tray lightly with cooking spray and arrange the chicken thighs in a single layer.
- In a bowl, combine the Greek yogurt, shredded cheddar cheese, minced garlic, and ranch seasoning until you have a smooth, thick mixture.
- Spread the creamy mixture evenly over each chicken thigh, ensuring they are well-covered.
- Sprinkle the panko breadcrumbs over the top of each piece of chicken.
- Place the baking tray in the oven and bake the chicken for 40-45 minutes, or until the internal temperature reaches 165°F.
- For a crispy top, activate the broiler during the last few minutes of cooking—this step is optional but adds to the texture!
- Remove the chicken from the oven and drain excess liquid from the pan, pouring it over the chicken to keep it juicy.
- Garnish with fresh parsley and serve.
Notes
For additional flavor, experiment with different ranch seasoning brands.
If you prefer, substitute chicken thighs with boneless chicken breasts, adjusting the cooking time as necessary.
