Ingredients

  • 6 hard-boiled eggs peeled
  • 1 avocado peeled, pitted, and cubed
  • ⅓ cup chopped red onion
  • ¼ cup chopped green onion
  • 1 tbsp dijon mustard
  • 2 tablespoons chopped dill pickles
  • salt and ground black pepper to taste
  • 2 tbsp greek yogurt or mayo optional
  • Chives more red onions
  • toasted sourdough


Instructions

  1. Chop the 6 hard-boiled eggs and place them in a bowl.
  2. Mash the avocado and mix it with the chopped eggs.
  3. Stir in the red onion, green onion, and dill pickles.
  4. Add the Dijon mustard and Greek yogurt or mayo as desired.
  5. Season with salt and pepper to taste, mix well, and serve immediately.

Notes

For a creamier texture, use Greek yogurt instead of mayo.
Adjust seasoning according to your preference for a personalized taste.
